Once employed by a major car manufacturer in Toronto, Carrie North was famous at work for her delectable pasta salad with feta
cheese and homemade Greek dressing. For every potluck event at the office, many hungry co-workers demanded that she bring in
her signature dish.
Although she complied, Ms. North hid a deep, dark secret: Her renowned Greek salad dressing was actually created by her best
friend, Shelley Gaal. And the truth was that Ms. North had no idea how to make it.
"We'd meet at the local coffee shop (and) we'd pass the salad," Ms. Gaal says of the duo's regular cloak-and-dagger handoff. "It was
like getting takeout, only it was takeout from Shelley."
"We do favours for each other," says Ms. North. "We're like sisters."
Two years ago, after moving with her husband and children to Kanata, Ms. North was forced to invent her own salad dressing when
she realized one day that she had nothing on hand for a dinner party. She quickly blended several ingredients from her kitchen, and
her tasty garlic vinaigrette was born.
"They went crazy for it," Ms. North says of her guests' response.
With two popular salad dressing recipes between them, and with the encouragement of husbands Geoff and Ron, in late 2005 the
women decided it was time to share their salad dressings with the world by going into business.
Their first step was to decide on a company name.
"'Saucey Girls' just popped up," says Ms. North of the catchy handle.
The next step was to design some funky labels and find a professional bottler before the dressings could be sold to the public.
"At the very beginning, Carrie was bottling it," Ms. Gaal recalls. But, soon, demand from family and friends outgrew their ability to keep
up. "People were driving us crazy," she says.
Even the Saucey Girls' nearest and dearest friends were feeling the pressure. Ms. North's mother worked hard keeping her Greek
and garlic vinaigrette-loving co-workers supplied, but it wasn't easy to keep up.
"She was being harassed if customers couldn't get it fast enough," says Ms. Gaal, who owns a Scarborough grocery store called
Shopco Foods with her husband.
"The store employees called them 'crack salads' because they're so addictive," she says. "They were calling me 'the salad pusher.' "
It's easy to see why. Ms. Gaal's Saucey Greek Goddess Vinaigrette is a dark and aromatic dressing that can easily hold its own with
the strong flavours of feta cheese, kalamata olives and red onions you'd expect in a classic Greek salad.
"I have been making it for more than 12 years," she says. "It's definitely different than the average Greek."
Ms. North's Sweet & Saucey Garlic Vinaigrette, on the other hand, is light and tangy -- the ideal accompaniment to a crisp spinach
salad.
Since officially joining forces in 2005, the Saucey Girls have added two more dressings to their lineup -- an extra-sweet, maple syrup-
based dressing called Saucey Sap Vinaigrette, and a Saucey Citrus Vinaigrette that Ms. North says is "light and refreshing and
captures the essence of summer."
"They're versatile," Ms. North says of the four vinaigrettes, adding they can all be used to marinate vegetables, meat, tofu, and
seafood.
"We want intense flavour -- when you have intense flavour you can use less dressing."
In an era of growing concern over childhood eating habits, Ms. North is pleased to say her 10-year-old son, Johnathan, loves the
garlic vinaigrette so much that he asks for spinach salad at meal times. She says Ms. Gaal's two little girls, aged 11 and 9, bring
salads made with Saucey Girls dressings to school to share with their classmates, and their teachers are now fans as well.
While testing the dressings, Ms. North ate "tubs" of spinach, and she often uses a dressing instead of higher-fat condiments like
mayonnaise on her sandwiches.
"You just have to make yourself do it," she says of including plenty of fresh leafy greens in her diet. "I substitute spinach for lettuce."
Since the not-so-distant days of taste-testing recipes on family members, the women have made inroads in the competitive specialty
food markets in both Toronto and Ottawa. They were recently brought on board by Ottawa's Farm Boy grocery chain, which sells the
four dressings in all Ottawa-area stores.
In addition, Saucey Girls dressings can be found at Savory's Fine Foods at the Bayshore Shopping Centre, and at the Herb and
Spice store on Bank Street. Both Savory's Fine Foods in Ottawa and the Fine Food Boutique in Toronto offer an international delivery

Ms. North and Ms. Gaal have now turned their culinary expertise to other types of sauces, and are preparing to release two unique
salsas -- Sweet & Sassy Salsa, and Hola Hot Salsa -- in Ottawa and Toronto.
And after the salsa? Ms. Gaal says she and her best buddy have been diligently working on two barbecue sauces they plan to
release sometime this summer.
Both ladies admit it's sometimes tough to combine the role of Saucey Girls with being full-time wives and mothers, but to them success
is a family affair.
"Our husbands have been our biggest fans and supporters," says Ms. North.

Saucey Girls' Spring Salad
Serves 4
- 6 cups (1.5 L) baby spinach leaves, lightly packed
- 2 cups (500 mL) chopped strawberries
- 7 ounces (200 g) goat's milk mozzarella, cubed
- 1/2 cup (125 mL) slivered almonds
- 1/2 cup (125 mL) sunflower seeds
Toss all ingredients together with homemade dressing and croutons (recipes on page F3).
Salad Dressing in a Snap
Makes 1/2 cup (125 mL)
- 4 tablespoons (65 mL) canola oil
- 6 tablespoons (100 mL) red wine vinegar
- 1/2 teaspoon (2 mL) fresh garlic, minced
- 1/2 teaspoon (2 mL) dried chives
Mix well with whisk. Toss with salad just before serving.
Garlic Herb Croutons
- 1/4 cup (50 mL) canola or olive oil
- 1/2 tablespoon (7 mL) fresh garlic, minced
- 1/2 tablespoon (7 mL) dried parsley
- 4 slices bread
1. Preheat oven to 300 degreesF (150 degreesC). Whisk together oil, minced garlic and parsley and lightly brush it on both sides of
bread slices using a basting brush.
2. Stack bread slices and cut into cubes the size of your choice. Spread cubes in a single layer onto a large baking sheet and bake
until they are dry and crisp, about 15 minutes (or longer, if croutons are large).
Shortcut tip: A quick alternative is to brush bread slices with your favourite salad dressing, then bake as above.
Saucey Girls' Cool Greek Pasta Salad
Serves 4
- 1 pound (450 g) rotini or penne pasta, uncooked
- 2 to 3 bell peppers (use red, green, yellow or orange for a colourful salad), diced
- 2 green onions, chopped
- 1/2 English cucumber, diced
- 1 cup (250 mL) Greek salad dressing (try Saucey Girls Saucey Greek Goddess Vinaigrette, or use homemade or other store-bought)
- 7 ounces (200 g) feta cheese (optional)
- Black olives (optional)
1. Boil pasta according to package directions. While cooking, wash and cut all vegetables. Drain pasta and rinse with cold water to
stop cooking.
2. In a large salad bowl, combine cooked pasta and vegetables. Add salad dressing and toss. Once tossed, you may garnish the top
with optional feta cheese and black olives.
Tip: This salad is even better the next day as the pasta absorbs the dressing. Just add a touch more Greek dressing before serving
leftovers.
